Try beetroot in different ways for taste and health

Beetroot is one vegetable that not only looks great to eyes but also great to health. It is just tasty and can either be taken in raw or by cooking. Here are few recipes to make with beetroot. These recipes with beetroot are easy and are also healthy.

1) Beetroot coot:

Ingredients needed:

  • 1 beetroot
  • 4 green chilies
  • 1 teaspoon of cumin seeds
  • Pinch of turmeric powder
  • 2 red chilies
  • 1 cup of coconut grate
  • 1 cup green gram
  • Required amounts of oil and salt

How to prepare?

  • Grate beetroot
  • Grind coconut, cumin seeds and green chilies well
  • Boil beetroot, green gram, turmeric powder and salt in a pressure cooker. Take every care that you boil them in the correct amount of water.
  • Boil once again boiled green gram, coconut grate, and beetroot
  • Once you are sure that coconut is boiled well, off the stove and place it aside
  • Finally, spice it up by adding little amount of oil and dry chilies in a pan. Mix all of them well and eat.

2) Beetroot coconut fry:

Ingredients needed:

  • 1/4th cup of coconut grate
  • 2 beetroots (grate them)
  • 1 teaspoon of cut garlic
  • Curry leaves in required quantity
  • 1 teaspoon of oil
  • ½ teaspoon of black gram
  • Required amount of salt
  • ½ teaspoon of chili powder

Preparation method:

  • Take oil in a saucepan and heat the oil. Once the oil gets heated up add mustard seeds and black gram and deep fry them
  • Once they start deep frying add curry leaves and garlic slices and fry them
  • Once the garlic is fried add salt, chili powder, and beetroot and fry them
  • Keep boiling them till beetroot gets boiled on low flame and add coconut grate
  • Mix them well and off the flames once you feel they have boiled well.

3) Beetroot pickle:

Ingredients needed:

  • 1 beetroot
  • ½ cup of yogurt
  • 1/4th spoon of turmeric powder
  • Required amount of salt
  • 2 tablespoons of oil
  • 1/4th teaspoon of mustard seeds
  • 4 tablespoons of fresh coconut grate
  • ½ teaspoon of Green chili
  • ½ teaspoon of cumin seeds

Ingredients needed for spicing:

  • ¼ teaspoon of mustard seeds
  • 2 red chilies
  • Required amount of curry leaves

Preparation method:

  • Peel off the outer layer of beetroot and cut them into pieces
  • Grind mustard seeds, green chilies, coconut grate and cumin seeds
  • Boil beetroot grate for 5 to 10 minutes by adding salt
  • Then add coconut grate and boil for 5 more minutes
  • Turn off the stove and cool it
  • Once it is cooled add yogurt
  • Then fry curry leaves and mustard seeds by adding oil to fry pan
  • Finally add this to beetroot and garnish with dry chilies.
